Thanksgiving Illustrated

This year we had a small gathering for our Thanksgiving dinner and I thought it would be fun to illustrate our menu for our guests. Just the basics really and pretty much all I could be trusted to cook, but everything turned out very tasty. I hope everyone had a yummy holiday.

Chocolate Coconut Cupcake

I left work last Friday evening on a mission. A mission to bake cupcakes. And boy am I glad that I did. These were delicious and so simple.
If you like Mounds, you’ll love these.

Cupcakes:
1 box Devil’s Food Cake Mix

Eggs, Oil and Water as described on box

1 tsp Vanilla Extract

2 tsp Coconut Extract

1/2 cup shredded coconut

I like to make my cupcakes in the extra large muffin pans (bake for 22 minutes), but if you aren’t a serious cupcake lover like myself, regularly sized cupcake pans are more than fine. Bake them as directed.

Frosting:
1 8oz pkg Regular Cream Cheese (softened)

1/2 stick Butter (softened)

1 Cup Confectioners Sugar

1 TBSP Coconut Extract

Beat until well combined and creamy. Keep refrigerated.
I like to add a little more of the shredded coconut on top once they are frosted.

Yummy.
